Location: Municipality of Polesine Parmense, 38 km from Parma
The castle on the banks of the Great River. Built in the early 400s by Mar-quises Pallavicino di Polesine, this castle has magnificent cellars dating back to the 300s, the oldest in Italy.
Cured meats, culatello, cheeses and wines were aged here. The castle has since been restored to its former glory. It is home to an elegant restaurant (1 Michelin star) and beautiful suites.
The restaurant
that has received the 2011 Michelin Guide Star and that represents the best of the Parmense Lowlands, refined and exclusive as a restaurant for the elite should be. The ingredients for the dishes presented in the restaurant are almost exclusively home produced.
A wonderful cuisine full of colour, focussed on and enriched by the main ingredients sourced directly from the kitchen gardens of the Antica Corte Palavicina. That’s how Chef Massimo Spigaroli has built up the success of his restaurant
The Cellars of the Corte, built in 1320 by the marquesses of Pallavicina, were used by them for curing salumi and maturing cheeses, for ageing their wines and storing the produce from their lands.
A place with a rich history, where they cured the Culatelli that they sent to the Dukes of Milan (the Sforza family) where they were used in the banquets held in the Sforza Castle, or as precious gifts to curry the favour of the foremost nobles of Europe or the most fearsome warlords.
Rooms and Suites
The Relais has six guest rooms available, all on the first floor that is served by a lift. They have a simple elegance, and are furnished with all the comforts and with attention to detail, the modern style installed during the renovation works integrating pleasingly with the period furnishings and with the magnificent sixteenth century panelled ceilings.
